This dish has everything you want in an afternoon snack: savory peppery Nocellara extra virgin olive oil granola with a little spicy kick, creamy soft cheese, and tangy sweet pickles.
1 tsp honey
1 cup rolled oats
1/2 cup sliced almonds
2 TBS sesame seeds
2 TBS sunflower seeds
1/2 tsp kosher salt
1/2 tsp dried rosemary
1/2 tsp (or more if you like extra spicy!) Aleppo-style pepper
Soft Cheese, such as ricotta or cottage cheese, or use a thick-style yogurt like skyr
Sweet Pickles, such as Golden Glo or Bread and Butter
Preheat oven to 350.
In a small bowl, stir together Nocellara extra virgin olive oil and honey with a fork.
In a medium bowl, stir together oats, nuts, seeds, salt, and spices.
Add olive oil/honey mixture to oat mixture and stir to coat evenly.
Pour onto a parchment paper lined baking sheet and spread out evenly.
Bake for 30 minutes, stirring once or twice during baking time.
Let cool completely on pan, store in an airtight container for up to 10 days.
For each portion, place 1/2 cup of soft cheese in a bowl, top with 2-4 TBS of granola, some sweet pickles, and then drizzle a little Nocellara extra virgin olive oil on top.
