Keep this savory Nocellera granola on hand for your next merenda - afternoon snack- to help with a pick me up, with just a little kick from Aleppo-style pepper and lots of protein to keep you going until la cena- dinner.

This dish has everything you want in an afternoon snack: savory peppery Nocellara extra virgin olive oil granola with a little spicy kick, creamy soft cheese, and tangy sweet pickles.

Ingredients

    For Granola

  • 3 TBS Olio Taibi Nocellara Extra Virgin Olive Oil

  • 1 tsp honey

  • 1 cup rolled oats

  • 1/2 cup sliced almonds

  • 2 TBS sesame seeds

  • 2 TBS sunflower seeds

  • 1/2 tsp kosher salt

  • 1/2 tsp dried rosemary

  • 1/2 tsp (or more if you like extra spicy!) Aleppo-style pepper

  • For serving

  • Soft Cheese, such as ricotta or cottage cheese, or use a thick-style yogurt like skyr

  • Sweet Pickles, such as Golden Glo or Bread and Butter

  • Olio Taibi Nocellara Extra Virgin Olive Oil, for serving

Directions

    For Granola

    1. Preheat oven to 350.

    2. In a small bowl, stir together Nocellara extra virgin olive oil and honey with a fork.

    3. In a medium bowl, stir together oats, nuts, seeds, salt, and spices.

    4. Add olive oil/honey mixture to oat mixture and stir to coat evenly.

    5. Pour onto a parchment paper lined baking sheet and spread out evenly.

    6. Bake for 30 minutes, stirring once or twice during baking time.

    7. Let cool completely on pan, store in an airtight container for up to 10 days.

    For Serving

    1. For each portion, place 1/2 cup of soft cheese in a bowl, top with 2-4 TBS of granola, some sweet pickles, and then drizzle a little Nocellara extra virgin olive oil on top.
