A little crunch plus the savory depth of za'atar seasoning combine for a fast and easy way to dress up asparagus.

2 pounds asparagus, trimmed (see note)
Kosher salt
4 tsp Za'atar (see note)
1/3 cup breadcrumbs (homemade or panko)
Preheat oven to 375.
Toss asparagus with Olio Taibi Biancolilla Extra Virgin Olive Oil and a few pinches of kosher salt on a rimmed baking sheet.
Roast asparagus for 10-15 minutes until tender but still slightly crisp.
In a large skillet, heat Olio Taibi Biancolilla Extra Virgin Olive Oil over medium heat until shimmering.
Add breadcrumbs and Za'atar to pan and toast, stirring regularly, for a couple minutes until everything is lightly browned and smells deliciously toasty.
Pile asparagus on a platter and then sprinkle toasted breadcrumbs over the spears. Serve warm.
This dish is best with thick asparagus spears, about 3/4-1" in diameter. Trim in your preferred way to remove woody base of spears.
Za'atar is common blend of herbs and spices found in Middle Eastern cuisines. But while common, different regions and different families will have diverse opinions on exactly what herbs will be included. Source Za'atar from a spice house with a blend you like- all will have sumac, sesame seeds, and salt, but depending on their origin, will vary in the additional savory herbs added. If you are sourcing a blend in the United States, Burlap & Barrel and Oaktown Spices both have fantastic blends, each with a distinctive flavor.
If you have any leftover toasted breadcrumbs, they will keep in an airtight container at room temperature for week. Try sprinkling some on a fried egg!
